Almost done...

We just turned over the hog in order to crisp up the skin after having scored it a few times. About 1/2 an hour to go folks, I can't wait. Smells and looks great, my mother in-law tried it and she said it tasted great.

Whole hog in 'la caja china'

We put on a butterflied 50lbs hog about 3:30 local time. The smell is begining to fill the back of the farm. About 2-2 1/2 hours to go.

'La Loma' in Santiago

Single lane dirt road, 1200 meters above sea level (about 4k feet). Walking down the road to the shack where we had a goat dinner prepared by a lovely old lady that is dirt poor and lives off of the kindness of others. We even had to use the real outhouse, puts things in perspective, I reckon...
